拉佩拉尔奶酪由经巴氏杀菌的牛奶制成,呈微微发黄的奶白色,精选高等乳酸菌,带特有的蓝色斑块。该品种年轻的奶酪呈半蓝色,味道较为细腻,香味醇厚。随时间推移,逐渐转变成蓝色奶酪,各方面特征得到全面彻底的发展,口味微辣,但丝毫不影响其滑腻醇香的特性。
其熟化时间可长达4个月,造就其浓郁的香味。入口较容易融化,味道强烈,较为复杂,口感粘稠,回味逐渐淡化。
